Creamed Spinach? Nope, just Quick and Creamy Spinach

I dream all these up myself, but this one I didn’t even adapt from another recipe. It is truly my original:

1 pkg frozen spinach (I used a bag not one of the boxes)
1/4 cup whipped cream cheese 
1.5 tbsp Onion Onion(TM)
garlic and pepper to taste
1/2 cup shredded cheddar (or similar) cheese

Microwave spinach in microwave-safe dish for 5 minutes. In the meantime, mix the whipped cream cheese with the Onion Onion and garlic/pepper. Stir  the cream cheese mixture into the warmed spinach; add the shredded cheese and stir again. Put new spinach mixture back into the microwave for 2-3 minutes until cheese is melted and dish is hot.

Less than 10 minutes and you have spinach worthy of being served next to steak-house steak. Divine!



Hummm Baby Homemade Hummus!

in less than 5 minutes. This is a very garlicy-peppery hummus that will leave your taste buds zinging!

  • 2 (15.5 ounce) cans garbanzo beans, drained
  • 1/2 cup tahini sauce
  • small to medium lemon (you’ll use both the zest and the juice)
  • 2 Tbsp. Garlic Garlic(TM)
  • 2 Tbsp. Garlic Pepper(TM)
  • 1/4 cup parsley flakes (cuz I cheat, but you can use fresh if you like of course)
  • 1/3 cup sliced red onion (or chopped, depending on your food processor’s horse power)
  • sea salt to taste
Zest your lemon all around the rind into your food processor. Then cut it in half and squeeze the juice directly into the food processor. (Whatever’s left will make your garbage disposal smell nice.) Add the rest of the ingredients. Process until smooth and creamy. Serve with flatbread. Hummmm baby!


Quick and simple guacamole: Mix 1/4 cup of Tastefully Simple’s Simply Salsa Mix with a 14.5 oz can of diced tomatoes (any kind; be adventurous). Chill for an hour. Mix the salsa with three to four ripe avocados. If you want some crunch, throw in a small chopped red onion. Done. Delicious!


Here’s a main dish recipe that is so easy, and will feed 10-12 hungry people!

Rich Tomato, Beef and Beer Bread Casserole

2 lbs lean ground beef
1½ cup chopped onion
3 tsp. Garlic Garlic(TM)
15 oz can tomato sauce
8 oz sliced fresh mushrooms
2 – 15 oz cans diced tomatoes
Bountiful Beer Bread Mix®
12 oz beer
1 Tbsp Dried Tomato & Garlic Pesto Mix

Saute ground beef, onion and Garlic Garlic in large skillet until ground beef is no longer pink; add next 3 ingredients. Pour into greased 9 x 13 casserole pan. Combine Bountiful Beer Bread Mix and beer; stir to blend. Dollop batter on top of mixture in casserole dish; spread evenly. Sprinkle with Dried Tomato and Garlic Pesto Mix. Bake at 350 degrees for approximately 45 minutes or until bread is golden brown. Let stand 15 minutes before serving. Makes 10-12 servings.

Notes: First this was inspired by a recipe in Tastefully Simple’s Life’s Simple Recipe Book submitted by Kristy Horvath (MN). I changed the proportions and some of the ingredients, so called it my own. Also, as I rarely make a dish the same way twice, I have varied the seasonings from time to time with always great results. I’ve also mixed the DT&GPM into the BBB batter before dolloping. So, feel free to experiment!


Need to feed a crowd? This is the perfect crowd-pleaser. And, of course, it’s simple!

Simple Fiesta Pasta Salad

1 1-oz pkg Simple Salad(TM) Dressing Mix

1 cup mayonnaise
*Real mayonnaise only – light may be used.

2 Tbsp. white wine vinegar
*Cider vinegar or red wine vinegar may be used

2 Tbsp. Fiesta Party Dip Mix®

1 pkg frozen mixed vegetables
*I like to use the Fiesta Mixed Vegetables with white beans, pinto beans, corn, and peppers

1 12-oz box penne pasta

Mix first 4 ingredients together and chill for 1 hour.

Cook mixed vegetables according to package directions.

Boil pasta according to package directions.

Toss pasta, vegetables and dressing together in large bowl. Can be served warm or cold.


Options: Add cubed or shredded cheese. Add diced tomatoes. Top with sour cream.

  3. Onions hate me, and if I lose any more weight, my Doc will kill me. I had a C-section many years ago and opted for a spinal. I wanted to be awake to see this baby, though my husband at the time, left the hospital and went to have dinner with my parents, who also never showed up. Good riddance, I say.

    • Well. I’m not sure where to start with this one! Did the spinal work and you got the see the baby, at least? I hope? Did ya have to good riddance your parents, too? (Because I have, so I know sometimes it’s for the best even if tragic.) I love onions, but hate, hate, hate black (slimy!) mushrooms. :>
